Pleurotus mushroom ciorbă

Pleurotus mushroom ciorbă, a Romanian sour soup, simmers with carrot and bay leaves, then gets finished with yogurt, sour cream and garlic. The broth is tangy and creamy, and the mushroom slices make it look in the bowl like tripe ciorbă, without the tripe. I serve it with a whole chili pepper on the side, so everyone can choose how much to put in their bowl. Preparation: 20 minutes. Cooking: 36 minutes. Resting: 20 minutes. Total time: 76 minutes. Servings: 6. Approximately 300 kcal and 8 g protein per serving.
Ingredients
- 1 large onion (200 g)
- 3 medium carrots (240 g)
- 3 tablespoons olive oil or oil of your choice
- 3000 ml water
- 500 g oyster mushrooms
- 2 bay leaves
- 1 teaspoon salt
- 1/2 teaspoon ground pepper
- 20 ml lemon juice
- 400 g yogurt with 1.5% fat
- 400 g sour cream with 24-30% fat
- 1 small head of garlic (30 g)
- 3 egg yolks optional
- 1 chili pepper
Preparation
1. Take the yogurt and sour cream out of the fridge 15 minutes ahead. Peel and wash the onion and carrots, dice the onion and grate the carrots; wash the oyster mushrooms, drain well and slice them. 2. Heat the oil in a pot and sauté the onion and carrots for 6 minutes, until softened. 3. Pour the water over the vegetables and bring to a boil in about 10 minutes. 4. Add the oyster mushrooms and bay leaves to the boiling water. Simmer for 20 minutes, until the mushrooms soften. 5. Season with salt and pepper, then add the lemon juice. Take the pot off the heat and leave to cool for 20 minutes. 6. Mix the yogurt with the sour cream, crushed garlic and, if using, the egg yolks. Stir in a few ladles of warm soup, then pour the mixture into the pot. 7. Serve the soup hot, with a chili pepper on the side.
Notes
Oyster mushrooms with firm caps are easier to slice; with larger ones, slice the stems thinner than the caps, since they soften more slowly. I found this soup on a website a long time ago, and I’m only making it now in Germany because oyster mushrooms are hard to find; at home, it’s a good compromise between my partner, who loves tripe ciorbă, and me, since I don’t eat tripe. Keep leftovers covered in the fridge for up to 3 days, and reheat only the portion you’re going to eat. I serve it with toast, and keep the chili pepper beside the bowl. For the version with egg yolks, use 3 egg yolks and temper the mixture with warm broth before pouring it in. The yogurt and sour cream contain dairy, and the version with egg yolks also contains egg.
Frequently asked questions
What mushrooms can I use instead of oyster mushrooms?
You can use champignon mushrooms, sliced about 5 mm thick, so they cook evenly.
Why are the mushroom stems still firm?
Thick stems soften more slowly than the caps; slice them about 3 mm thick.
Can I reheat the soup without the mixture splitting?
Heat it over low heat for about 3 minutes, stirring, and take it off the heat before it starts to boil.
