Crispy baguette with roasted garlic and fondue cheese

I discovered this recipe after seeing it with two friends, each with slight differences, and it stuck in my mind. One morning, I decided to try it when I had a leftover box of fondue cheese from a competition and two fresh baguettes. The roasted garlic makes all the difference, and the combination with melted cheese really works for breakfast. The first time I tried the simple version, but I repeated it and experimented a bit later. Quick Info Total Time: 35 minutes Servings: 4 Difficulty: Easy Ingredients 1 box of Emmental fondue cheese (200-250 g) 2 white baguettes (or crusty rolls) 2 heads of garlic 1 tablespoon oil (preferably olive) 1/2 teaspoon dried oregano 1/4 teaspoon sweet paprika freshly ground black pepper, to taste salt Preparation Steps 1. Preheat the oven to 180°C, conventional or fan. 2. Prepare the garlic: cut the top off each head to expose the cloves. Place them in a small baking dish, preferably ceramic or glass. 3. Mix the oil with oregano, paprika, a pinch of salt, and pepper. Pour over the garlic, ensuring it seeps between the cloves. 4. Remove the lid from the fondue cheese box (if it has one), keep the protective foil, and place the box, lidless, next to the garlic in the dish. If the cheese doesn't come in an oven-safe ceramic dish, transfer it to a small heat-resistant container. 5. Place the dish in the oven for 20 minutes. 6. Meanwhile, score the baguettes: cut thick slices of 2-3 cm, but do not cut all the way through, leaving the base intact. This way, the baguette opens like a fan, but the slices remain attached. 7. After 20 minutes, add the baguettes to the dish, directly on the grill or on a baking paper, and continue for another 10 minutes. The baguettes should brown slightly. 8. Remove everything from the oven. Let the garlic cool for 2-3 minutes, then press on the cut side to squeeze out the roasted garlic paste. Carefully pull apart the baguette slices and spread each section with garlic. 9. Mix the fondue cheese a bit (if needed, to make it smooth) and generously put it on each scored baguette. Serve immediately while everything is warm. Why I make this recipe often It’s quick, doesn’t require complicated ingredients, and the roasted garlic completely changes the flavor. It works as a snack, but also for breakfast when you want something special. The baguettes remain crispy on the outside and soft on the inside, especially if they are warm. If you love melted cheese and don’t want overly elaborate recipes, this one works very well. Tips and Variations Tips - Use baguettes with a thin crust so they are not hard to chew after baking. - You can cover the garlic with aluminum foil if you have an oven that dries it out too much to bake it evenly. - If the fondue cheese seems too thick after heating, add 1-2 tablespoons of warm milk and mix. Substitutions - You can use any fondue cheese (not just Emmental): it also works with Brie, Camembert, Raclette, or even a cream cheese spread if you don’t have classic fondue. - The baguettes can be replaced with homemade bread cut lengthwise or rolls if you want individual servings. - Instead of oregano, you can use thyme, rosemary, or a mix of herbs. Variations - Add thin slices of tomatoes between the cuts of the baguette before putting on the cheese. The tomatoes warm up and add freshness. - For a stronger flavor, sprinkle a bit of grated Parmesan or cheese on top at the end and put the baguette under the grill for 2-3 minutes. - If you want it spicy, add chili flakes or hot paprika over the cheese. - You can add fresh parsley or basil leaves on top after removing from the oven. Serving Ideas - It works as a snack at parties, cut into small sections. - It’s good for breakfast alongside a fresh salad. - Great with fried eggs or an omelet for a quick brunch. - If there are leftovers, you can reheat it for lunch like a hot sandwich. Frequently Asked Questions 1. Can I use pre-peeled garlic? No. Whole garlic, roasted with the skin, has a different texture and flavor, it doesn’t dry out in the oven. 2. What can I substitute for fondue cheese if I can’t find it? You can use any soft cheese that melts: Brie, Camembert, fatty Telemea, whole milk cheese, or cream cheese mixed with a bit of milk. 3. Can I prepare it in advance and keep it for later? You can roast the garlic and use it later, but the baguettes are best immediately after coming out of the oven. Reheating works, but the texture won’t be the same. 4. Can the recipe be made without an oven? It’s difficult because the garlic doesn’t roast the same on the stove or in the microwave. For cheese, you can use a fondue machine or a steamer, but it won’t have the same result for the bread and garlic. 5. Doesn’t the baguette get too dry when baked? If you use fresh bread and don’t leave it too long, it won’t harden. You can check after 8-10 minutes to ensure it doesn’t become crispy like toasted bread. Nutritional Values (per serving, estimated) Calories: 320-350 Protein: 12-14 g Fat: 14-16 g Carbohydrates: 40-45 g Values may vary depending on the cheese used and the type of bread. The fondue cheese and oil are the main sources of fat, while the bread provides most of the carbohydrates. Storage and Reheating If there are leftovers, keep the baguette with cheese in the fridge, wrapped or in a closed container, for a maximum of 2 days. Reheat in the oven for 5-7 minutes at 180°C, directly on the grill or in a dish, covered with foil to prevent drying out too much. The roasted garlic can also be used in other dishes if you have leftovers. The baguettes won’t have the same crispy exterior after reheating, but the taste remains good.

Preparation

I scored the garlic at the tip and placed it in a tart pan. I mixed the oil with the spices and poured it over the garlic. I opened the ceramic dish containing the cheese, and placed the protective foil over the garlic to help it bake at the same time as the cheese. I placed the tart pan with garlic and the ceramic dish with cheese on a tray and put it in the oven for 20 minutes at 180 degrees. I scored the rolls into slices, keeping the base uncut, and placed them in the oven next to the cheese 10 minutes before the time was up. After taking everything out of the oven, I peeled the garlic and inserted the cloves between the cuts of the rolls, then spread the cheese over the rolls. It is good, slightly spicy, and I will definitely repeat the recipe and try the version with tomatoes as Laura and Dya did.
