Sift together the flour, starch, and baking powder, then add them to the mixture by folding, using a spatula to incorporate them easily. Prepare a 28 x 35 cm baking tray lined with parchment paper, and pour 2/3 of the base mixture, leveling it evenly with a spatula. Mix the remaining mixture with cocoa, forming a chocolate paste. Place this paste in a piping bag and, using it, draw evenly spaced parallel lines over the base in the tray. Preheat the oven to 185 degrees Celsius and place the tray inside, allowing the base to bake for 20-25 minutes, or until well baked but not changing color and passing the toothpick test. Once baked, remove the base from the oven and let it cool on a rack. Filling: Meanwhile, prepare the vanilla pudding according to the instructions on the package, making sure to add cherry juice instead of milk, in the specified amount. Once the pudding is ready, let it cool slightly before adding the cherries, well-drained from juice. Pour the filling over the cooled base and leave everything in the fridge for at least 2 hours for the flavors to blend. Cream: Start by softening the gelatin sheets in cold water. After a few minutes, squeeze the gelatin and melt it in slightly warmed lemon juice, adding 2 tablespoons of water. In another bowl, mix the yogurt well with the vanilla essence. In another container, whip the cream until it becomes firm. Integrate the melted gelatin into the yogurt mixture, stirring constantly to prevent lumps from forming. Then, carefully fold in the whipped cream and homogenize everything. Spread the obtained cream over the cherry filling, smoothing the surface with a spatula. Decorate with grated chocolate or chocolate flakes, as desired. Let the dessert chill for at least an hour before serving, for all the flavors to meld and to achieve a perfect texture.
