In a large bowl, we mix the whole eggs and the yolks with the sugar, using a whisk or a spatula. It is important to mix the ingredients well until the sugar is completely dissolved, but without creating an airy foam, as this is not our goal at this stage. Once the chocolate is completely melted and has cooled slightly, we add it to the egg and sugar mixture. We carefully mix to ensure it combines perfectly. Next, we incorporate the flour, sifting it to avoid lumps. We mix again, but with gentle movements, so as not to aerate the mixture too much. At this point, the enticing aroma of chocolate will spread throughout the kitchen, anticipating the pleasure of taste. We now prepare the aluminum molds, greasing them with butter and dusting them with cocoa to prevent the cake from sticking. We fill each mold only three-quarters full, as the batter will rise during baking. This way, we ensure that the cake will have a perfect texture. We preheat the oven to 180 degrees Celsius, and when it reaches the desired temperature, we place the molds with the batter inside. We bake the cakes for 10 minutes, being careful not to leave them too long, as we want to achieve a soft and creamy interior with a slightly crispy crust. After the baking time has expired, we take them out of the oven and let them cool for a few minutes before unmolding. Serving these cakes is a true feast for the senses. We can pair them with fresh berries, which add a note of acidity and freshness, or with flavored jams that will enhance the chocolate taste. Another delicious option is to add whipped cream, which will provide a pleasant contrast of textures. This simple yet so flavorful cake is perfect for chocolate lovers. I have also successfully experimented with combinations of chocolate, using 70 g of milk chocolate and 60 g of dark chocolate, resulting in just as delicious a treat.
