Baked chicken casserole

Baked chicken casserole is served warm at the table or cold, sliced, usually with salad. The boiled chicken is bound with eggs and sour cream into a casserole that's soft in the middle, with a browned top; even the fussy eaters were happy with it, and that makes me glad. I chop the herbs finely so there are no long strands left among the chicken cubes. Preparation: 20 minutes. Cooking: 45-50 minutes. Total time: 65-70 minutes. Servings: 3. Approximately 700 kcal and 63 g protein per serving.
Ingredients
- 5 eggs
- 300 g sour cream
- 1 teaspoon salt
- 1/2 teaspoon ground pepper
- 1 teaspoon baking powder
- 10 g chopped dill
- 10 g chopped parsley
- 3 tablespoons breadcrumbs
- 500 g cooked chicken
- 10 g butter
Preparation
1. Preheat the oven to 170 °C. In a bowl, beat the eggs with the sour cream, then stir in the salt, pepper, baking powder, dill, parsley and 2 tablespoons of breadcrumbs. The mixture should be smooth, with the herbs evenly distributed throughout. 2. Cut the boiled chicken into small cubes, add it to the mixture and stir until the pieces are coated. 3. Grease the baking dish with butter and sprinkle 1 tablespoon of breadcrumbs evenly over it. 4. Pour the mixture into the dish and bake for 45-50 minutes, until the casserole is set in the middle and browned on top.
Notes
For a gluten-free version, replace the 3 tablespoons of breadcrumbs with 3 tablespoons of gluten-free breadcrumbs; the mixture contains eggs and dairy. Store in the fridge in a covered container for up to 3 days; you can make it with chicken that has been cooked ahead of time. Cooked breast meat dries out more easily than thighs, so choose pieces that have stayed juicy; if the chicken is still very hot, let it cool before cutting so it doesn't crumble. It goes well with a simple green salad.
Frequently asked questions
Can I use only chicken breast?
Yes. Cut the cooked breast into cubes about 1.5 cm across so they distribute well through the casserole.
What should I do if the middle is still soft after baking?
Leave it in for 5 more minutes at 170 °C, then check whether the middle has set.
What can I use instead of dill?
Use 10 g finely chopped green onion instead of the dill.
