This is the crucial stage, as the activated yeast will bring your dough to life. On a clean table, sift the flour, an essential ingredient for achieving fluffy and crispy grissini. In a large bowl, add the sifted flour, then make a well in the center and pour in the yeast mixture, olive oil, salt, and, if desired, some dried herbs to add extra flavor. Begin kneading the dough with your hands, combining all the ingredients until you obtain a homogeneous and elastic composition. This is the time to get to work, kneading the dough for about 10 minutes until it becomes smooth and elastic. Then cover the bowl with a clean towel and let it rise in a warm place for about an hour, or until it doubles in volume. While the dough rises, you can prepare your carrot cream. Boil the carrots in a pot with a little water or, for a more intense flavor, roast them in the oven until they become soft. Once cooled, place them in a blender along with sour cream, olive oil, salt, and pepper. Blend everything until you obtain a smooth and homogeneous cream, which will be perfect to accompany the grissini. After the dough has risen, preheat the oven to 200 degrees Celsius and prepare the trays with baking paper. Roll out the dough on a floured surface, then cut it into strips about 2 cm wide and 0.5 cm high. The length of the grissini can vary according to your preferences, but it is recommended to make them long for a more attractive appearance. Place the strips on the prepared trays and bake them in the oven for 15 minutes, or until they become golden and crispy. You may need to bake the grissini in several batches, and from the ingredients used, you should get about 9 full trays. For the dip, combine all desired ingredients in a blender, mixing them until you obtain a soft and homogeneous sauce. This can be adjusted to taste by adding preferred spices or herbs. Serve the grissini warm, alongside the carrot cream and your favorite dip, and enjoy a delicious and flavorful snack!
