Grilled mushroom risotto

Salad - Grilled mushroom risotto by Sabrina I. - Recipia

Grilled mushroom risotto gets hot stock one ladleful at a time and stays creamy, with the grains still whole. Rehydrated porcini add flavor to the rice, while fresh mushrooms browned on the grill are served on top with parsley or tarragon, lemon and Parmesan. I like to serve it with a few drops of extra-virgin olive oil drizzled straight onto the plate. Preparation: 15 minutes. Cooking: 51 minutes. Resting: 8 minutes. Total time: 74 minutes. Serves: 4. Approximately 620 kcal and 16 g protein per serving.

Ingredients

For the risotto

  • 1500 ml chicken stock
  • 15 g dried porcini mushrooms
  • 30 ml olive oil
  • 1 small onion (100 g)
  • 2 celery stalks (100 g)
  • 400 g Arborio rice
  • 150 ml vermouth or dry white wine
  • 1 teaspoon salt
  • 1/2 teaspoon ground pepper
  • 25 g butter
  • 40 g grated Parmesan

For the grilled mushrooms

  • 400 g fresh wild mushrooms
  • 10 g parsley and/or tarragon
  • 1 lemon (45 ml juice)
  • 1/2 teaspoon salt

To serve

  • 20 g grated Parmesan
  • 15 ml extra-virgin olive oil

Preparation

1. Heat 150 ml of the chicken stock and soak the dried porcini for 5 minutes, until softened. Remove, chop and reserve the liquid. Keep the remaining 1350 ml of stock hot. 2. Finely chop the onion and celery, then slice the fresh mushrooms. Heat 30 ml of olive oil in a large pan and cook the onion and celery over low heat for 10 minutes, stirring often, until softened but not colored. 3. Turn the heat to high, add the rice and stir for 1 minute. Pour in the vermouth or wine and cook for another 2 minutes, stirring until the liquid has evaporated. 4. Add the reserved porcini liquid, chopped mushrooms, 1 teaspoon of salt, 1/2 teaspoon of pepper and a ladleful of hot stock. Reduce the heat to medium-low and cook for about 30 minutes, stirring often and adding a ladleful of stock whenever the liquid has been absorbed. Stop when the rice is tender but the grains still hold their shape. 5. While the rice cooks, cook the fresh mushrooms in a hot grill pan over high heat for 8 minutes, until softened and browned in places. Toss them in a bowl with the chopped parsley and/or tarragon, 1/2 teaspoon of salt and the lemon juice. 6. Take the risotto off the heat and taste it, adding more salt or pepper if needed. Stir in the butter and grated Parmesan, adding a little hot stock if the mixture seems too thick. Cover and leave for 3 minutes. 7. Serve with the grilled mushrooms, grated Parmesan and extra-virgin olive oil.

Notes

For a meat-free version, replace the chicken stock with 1500 ml of vegetable stock. Butter and Parmesan contain dairy, and stock cubes may contain gluten, so check the label. Keep it in a sealed container in the fridge for up to 3 days. I serve it with a green salad and a simple dressing, so there’s something fresh on the side. In texture, it’s closer to a creamy pilaf than to boiled rice with separate grains. Choose dried porcini that feel springy and smell fresh, not crumbly ones. Wild mushrooms vary a lot in size, and thicker ones may need a few minutes longer on the grill than thin slices. Stock made from cubes may already be salty, so taste before adding more salt at the end.

Frequently asked questions

Can I use brown mushrooms instead of wild mushrooms?

Yes, use 400 g of brown mushrooms and slice them about 5 mm thick so they cook evenly on the grill.

What should I do if the rice is still firm after 30 minutes?

Add another ladleful of hot stock and let it cook for 3 minutes before tasting it again.

Why did it get too thick while resting covered?

Stir in 30 ml of hot stock just before serving, until it returns to a creamy consistency.

Can I use Carnaroli rice instead of Arborio?

Yes, Carnaroli works well; start tasting it after 25 minutes, as the cooking time can vary a little between rice varieties.
