Wash the sour cherries very well, making sure to remove all the stems, then rinse them in several waters to eliminate any impurities. After washing, place the sour cherries in a colander, allowing them to dry completely. The next important step is to remove the pits, being careful not to crush the fruits so that they retain their texture. Once the pits have been removed, place the sour cherries in a larger container with a capacity of at least 10 liters. Add boiled and then cooled water, lemon salt, and salicylic acid, which should be dissolved in a little cold water. This mixture will help preserve the sour cherries and prevent fermentation. Use a wooden spoon or a similar tool to thoroughly homogenize the mixture, gently crushing the fruits to release the juice. Cover the container and let it sit for 24 hours in a cool place, but away from sunlight. The next day, after noticing that the sour cherries have started to release their juice, add the sugar, mixing well to distribute it evenly. Let the mixture sit again for 24 hours, stirring occasionally to ensure the sugar dissolves completely. This process will create a delicious syrup that will enhance the flavor of the sour cherries. After two days, it’s time to strain the mixture. Use double cheesecloth to separate the fruits from the syrup, being careful to squeeze the cheesecloth well to extract as much sour cherry juice as possible. Once you have obtained the syrup, transfer the drained sour cherries to sterilized jars. Carefully pour the syrup over the fruits, ensuring they are completely covered. Cover the jars with lids and seal them well to prevent air from entering. Label the jars with the date of preparation and the name of the contents, then store them in the pantry. These preserved sour cherries will keep excellently for 2-3 years, allowing you to use them in various recipes. You can add these delicious sour cherries to cakes, puddings, tarts, jellies, creams, or even ice creams, bringing a touch of flavor to any dessert.
