Once the water is boiling, add the 5 tablespoons of ground coffee, stirring well to ensure an even extraction of flavors. After the coffee has boiled for a few minutes, remove it from heat and let it cool completely, while its intense aroma begins to waft through the kitchen. In a separate bowl, we will prepare the meringue. Beat the egg whites with a pinch of salt using an electric mixer until they form stiff peaks. Gradually add the powdered sugar, continuing to mix. Once the mixture becomes shiny and firm, almost like a meringue, it's time to incorporate the Mascarpone cheese. Use a spatula to gently fold it in, being careful not to deflate the meringue.
