Stuffed Potatoes with Cheese and Sour Cream

This is a light and healthy dinner dish, perfect for days when we want to enjoy a delicious yet quick meal. The recipe is designed to be ready in about an hour, and the number of servings depends on how many potatoes we choose to use. I opted for six potatoes, which is ideal for four servings, considering that each family member has different preferences regarding quantity. So, if you have larger or smaller potatoes, adjust the number accordingly to your needs. The first step is to boil the potatoes, leaving them in their skins for about 30 minutes. It is important not to overboil them, as we want them to remain firm enough to take out of the water without breaking. After boiling them, we can start with the rest of the preparations. We preheat the oven to 180 degrees Celsius, and in the meantime, we peel the potatoes, being careful not to break them. Using a spoon, we scoop out the insides of the potatoes, which we will keep for the filling. We mash the scooped out flesh well, then add grated cheese. It is important to use a cheese that you like, and if it is unsalted, feel free to add up to half a teaspoon of salt to enhance the flavor. We continue with one egg and a tablespoon of sour cream, mixing everything until we obtain a smooth cream. This delicious mixture will be used to fill the potatoes. After filling each potato, we place them in a baking dish where we have added enough oil to coat them, then we bake them for about 30 minutes. In the meantime, we prepare a fresh salad to complement the meal. We use some radishes, mixed salad greens, green onions, red bell pepper, and olives, seasoning them with salt, olive oil, and freshly ground pepper. This salad will add a crunchy and refreshing note, perfect alongside the stuffed potatoes. The potatoes are served warm, and on top, we can add a tablespoon of sour cream and a few sprigs of freshly chopped parsley for an extra touch of flavor and color.
