Waffles with Bananas and Dandelion Syrup

To prepare the most delicious and fluffy waffles, start by gathering all the necessary ingredients. You will need four essential ingredients: flour, baking soda, salt, and sugar. In a large bowl, combine these dry ingredients. Make sure to mix them well so that they are completely homogenized, preparing them for the next step. Separate the eggs; place the egg whites in a clean bowl, where you will beat them until stiff peaks form, and the yolks in a large enough bowl to add the liquids later. Use a whisk to beat the yolks until creamy and slightly discolored. Gradually add the milk mixed with the oil, alternating with the flour mixture. Make sure to continuously mix with the whisk to avoid lumps. The final consistency should be similar to that of pancake batter, but it can be a bit thicker. If you want to add extra flavor, now is the time to incorporate the almonds, chopped or ground, depending on your preference. They will provide a special taste and a crunchy texture to your waffles. Once the yolk and flour mixture is well homogenized, move on to the next step: beat the egg whites until stiff peaks form. It is important that the bowl you use to beat them is completely clean; otherwise, they will not rise properly. Once the egg whites reach the desired consistency, carefully fold them into the yolk mixture. Use a spatula to incorporate the egg whites, mixing gently from top to bottom, so you don’t lose the air in the mixture. You will obtain a soft, flowing, and very fluffy batter, perfect for making waffles. In the meantime, turn on the waffle maker and let it heat up. For the first batch of waffles, lightly grease the plates with a little oil to prevent sticking. Then, pour the batter into the machine using a measuring cup, being careful not to overfill it, as the waffles will expand during baking. After a few minutes, when the waffles become golden and crispy, remove them with a spatula. They are perfect to be served warm, alongside delicious toppings. You can opt for a sweet syrup, such as maple syrup or chocolate syrup, or you can add fresh fruits like bananas or strawberries. Another delicious option is to serve them with jam or whipped cream for an authentic treat. In our case, we chose to enjoy them with bananas and dandelion syrup, a unique combination that brought a touch of originality to our table. Enjoy your meal!
