Pork chop with red cabbage and champagne

The pork chops are cut into generous pieces, each about 2-3 cm thick. These portions are ideal for cooking evenly, retaining their juiciness and flavor. After being cut, salt and freshly ground pepper are sprinkled on both sides of the chops, ensuring that each bite will be full of flavor. We place the chops in a hot pan, preferably cast iron or non-stick, to achieve a golden, crispy crust. In the meantime, we take care of the onion. It is carefully peeled, removing the outer skin, and then sliced into thin, round slices. The onion will add an additional layer of flavor, enriching our dish. Once the pan is well heated and the chops are placed, we add the onion slices on top of them, allowing them to soften and caramelize slightly, releasing their natural sweetness during cooking. To further enhance the flavors, we can also add a few cloves of garlic, either whole or sliced, which we will place among the chops and onion. The garlic will infuse the meat with a strong flavor, perfectly complementing the taste of the pork. After a few minutes, when the onion starts to turn golden, we can add a tablespoon of olive oil or butter to help caramelize the onion and provide a rich taste. Once the chops are browned on one side, we carefully turn them over, allowing them to cook on the other side as well. It is important not to overcook them, so they do not become dry. Once they are ready, we can splash a little white wine or broth over them, covering the pan with a lid to allow the flavors to combine and intensify. Finally, the pork chops with caramelized onions are served hot, alongside creamy mashed potatoes or a fresh salad.
