After washing them, carefully peel them, taking care to maintain the integrity of the pulp. Cut the tomatoes into suitable slices to ensure an even distribution of flavors in the jars. Place the slices in a larger bowl where you will combine all the ingredients. Continuing with the preparations, clean the peppers or bell peppers, removing the stems and seeds. Cut them into strips or pieces similar in size to the tomatoes, so they harmonize in the mix. Add the cut peppers over the tomatoes, creating a vibrant and colorful mixture. To intensify the flavor, also add fresh parsley, which you can chop finely to release the aromas. Sprinkle salt to taste and mix all the ingredients well, ensuring that the salt is evenly distributed. At this point, let the mixture sit for a few hours. This waiting time allows the flavors to meld and the vegetables to release their juices. After the recommended time has passed, prepare the sterilized jars, making sure they are clean and dry. Fill each jar with the vegetable mixture, being careful to also add the juice released by them to ensure effective preservation. After filling the jars, screw the lids on tightly and place them side by side on the stove tray. It is important that the jars are placed carefully so that they do not bump into each other. Preheat the oven to a moderate heat and place the tray in the cold oven. This steam sterilization method will allow the jars to heat gradually, avoiding the risk of cracking. Once the mixture starts to boil, reduce the temperature to low and leave the jars in the oven for an hour. This cooking time will ensure optimal preservation and intensification of the flavors. After the time has passed, remove the jars from the oven and transfer them between blankets to cool slowly. This technique will help maintain proper internal pressure, ensuring that the jars seal properly. Once the jars have completely cooled, label them with the date and contents, then store them in the pantry. This tomato and pepper preserve is ideal for use in soups, stews, or sauces, adding a touch of flavor to any dish.
