Milanese potato croquettes

To prepare a delicious potato roll recipe, we start by selecting the right potatoes. Choose potatoes with a fine texture, such as 'Yukon Gold' or 'Bălțat', which boil easily and have a sweet taste. Peel the potatoes and cut them into equal cubes, which will boil evenly. Place the potato cubes in a large pot, cover them with cold water, and add a teaspoon of salt to enhance the flavor. Put the pot on medium heat and let the potatoes boil for about 15-20 minutes until they become very soft. Check with a fork if they are cooked; if the fork goes in easily, they are ready. Drain the water and let them cool slightly, then mash them with a potato masher, obtaining a fine and smooth puree. In a large bowl, add the soft butter over the potato puree. The butter will melt quickly, integrating perfectly. Then, add the fresh yeast, which must be active, salt, and grated cheese. You can use telemea cheese or cottage cheese, depending on your preferences, for a rich flavor. Mix the ingredients well until you get a uniform composition. In another bowl, beat the egg whites until they become firm. The beaten egg whites will add extra lightness and airiness to the preparation. Gradually add them to the potato mixture and gently incorporate them so as not to lose the air in the composition. Also, incorporate the flour little by little until you obtain a homogeneous but not sticky dough. Let the dough rise in a warm place, covered with a clean towel, for about an hour, until it doubles in volume. After it has risen, sprinkle some flour on a work surface and roll the dough into a thick sheet about 1 cm. Use a glass or a cutter to cut circles from the dough. Place the dough circles on a baking tray lined with parchment paper and let them rise again for 30 minutes. Meanwhile, heat the oil in a deep pan. When the oil is hot, carefully fry the rolls, one or two at a time, until they become golden and crispy on each side. Remove them onto a paper towel to absorb excess oil. Serve the rolls hot, sprinkled with grated cheese on top, which will melt easily. These potato rolls are ideal as an appetizer or snack, being delicious and flavorful. Enjoy your meal!
