- 2 medium sweet potatoes
- 1 tablespoon coconut oil

Preparation
1. Peel the 2 sweet potatoes and cut them into thin strips, like fries. 2. Arrange the strips in a single layer on a baking tray lined with parchment paper. 3. Add 1 tablespoon coconut oil, 1 teaspoon cinnamon and 1/4 teaspoon salt. Toss them with your hands until the strips have a thin coating of oil and seasoning. 4. Bake at 200 °C for 25 minutes, until the strips turn golden and soften slightly.

Medium sweet potatoes that feel firm when pressed and have no soft spots are easier to peel and cut into even sticks. Strips wider than a finger take longer to cook through in the middle, even if the edges start to brown. Coconut oil hardens when cold; warm the spoon between your palms for a few moments so you can spread it more easily. Arranging them on the tray is the part many people rush: leave about 1 cm between the sticks, without overlapping them. The cinnamon on the surface can darken before the strips soften, especially near the edge of the tray. A simple cabbage salad with vinegar on the side rounds out dinner. Store any leftovers in a container in the fridge for up to 3 days, but the strips soften as they sit. You can replace the coconut oil with 1 tablespoon sunflower oil. For a different flavor, use 1 teaspoon ground ginger instead of cinnamon.
