Green bean stew with zucchini and smoked pork belly

Meat - Green bean stew with zucchini and smoked pork belly by Pompilia J. - Recipia

Green bean stew with zucchini and smoked pork belly thickens as the grated zucchini breaks down, since green beans take longer to cook than zucchini. The browned pork belly and tomato and pepper paste give the sauce a smoky note, a little sweetness and a touch of heat. When choosing green beans, I look for thin pods without tough strings. Prep: 20 minutes. Cook: 85 minutes. Total time: 105 minutes. Serves: 6. About 420 kcal and 15 g protein per serving.

Ingredients

  • 60 ml oil
  • 450 g smoked pork belly
  • 2 large onions
  • 1 medium carrot (80 g)
  • 60 ml warm water
  • 650 g grated zucchini
  • 500 g green beans
  • 500 ml boiling water
  • 1 teaspoon salt
  • 200 g tomato and pepper paste
  • 1 teaspoon dried thyme
  • 1/2 teaspoon ground pepper
  • 2 bay leaves
  • 1 head of garlic
  • 15 g parsley

Preparation

1. Pour the oil into the multicooker pot and select the FRY program for 25 minutes. Once the oil is hot, add the thinly sliced pork belly and brown it for 10 minutes, turning the slices until they are browned on both sides. 2. Transfer the pork belly to a dish. Add the finely chopped onion and carrot to the same fat and cook for 15 minutes, stirring constantly; pour in a little warm water from time to time, until softened. 3. When the FRY program ends, return the pork belly to the pot, add the grated zucchini and the green beans broken in half. Pour in enough boiling water to cover the vegetables, add 1/2 teaspoon salt, close the lid and set STEW for 1 hour. 4. After 45 minutes, open the lid and check the beans. If they are almost tender, add the tomato and pepper paste, thyme, pepper and bay leaves, then close the lid and cook for another 10 minutes. 5. Taste the stew, adjust the salt with the remaining 1/2 teaspoon and add the pressed garlic. Close the lid and let the program finish for the remaining 5 minutes. 6. Unplug the multicooker and remove the pot. Sprinkle with the finely chopped parsley.

Notes

Keep refrigerated in a covered container for up to 3 days; when reheating, add a little water if the sauce has thickened too much. Have some bread alongside for dipping in the sauce. Young green beans with thin pods and no tough fibers become tender faster than mature ones. Pork belly is salty to begin with, so taste the stew before adding more salt. Spices added near the end keep their aroma in the sauce better. Sometimes more mature beans are still firm at the end of the program; let them cook longer until tender. Grated zucchini releases liquid and breaks down as it cooks, thickening the stew. If the zucchini has large seeds, scoop out the soft center with a spoon before grating it.

Frequently asked questions

Can I use frozen green beans?

Yes, add them straight to the pot without thawing. Check whether the pods are tender toward the end of the program.

Can I use yellow beans?

Yes, break the pods into pieces about 4 cm long. Check their texture before adding the tomato paste.

Can I dice the zucchini instead of grating it?

Yes, cut it into cubes about 2 cm across. The pieces will be more distinct, and the sauce will be less thick.
