Then, sprinkle a little flour in each mold or, if you prefer, you can use parchment paper to prevent sticking, which will make it even easier to remove the dishes from the molds after baking. In a large bowl, mix the flour with the baking powder and paprika, then sift these ingredients to aerate them and eliminate any lumps. Add salt and pepper to taste, keeping in mind that these spices will influence the final flavor of the dish. In another container, beat the eggs with the milk and oil, mixing well until you obtain a homogeneous and fluffy composition. At this point, gradually incorporate the flour mixture, stirring carefully to avoid forming lumps. Once the dough is well homogenized, add the finely chopped mushrooms, crushed garlic for extra flavor, and finely chopped parsley, which will add a fresh and aromatic note. Mix again with a spatula or wooden spoon, ensuring that all ingredients are evenly distributed in the dough. Don’t forget to adjust the taste with salt and pepper to achieve a truly delicious dish. After the dough is ready, pour it into the prepared molds, filling them up to 2/3 of their capacity to allow the dough to rise nicely during baking. Once the baking time has expired, remove the tray from the oven and let the dishes cool in the molds for a few minutes. This step is essential as it allows the structure to stabilize. Then, using a spatula, carefully remove the dishes from the molds and place them on a rack to cool completely.
