Nigella-style lamb ribs with potatoes

Meat - Nigella-style lamb ribs with potatoes by Paula O. - Recipia

Nigella-style lamb ribs with potatoes get their distinctive note from Suffolk lamb, dried Moroccan mint and chilli flakes. The ribs are simmered until tender, then browned in the reduced cooking liquid, alongside golden fried potato halves. For the ribs, I look for meaty pieces with the meat clinging firmly to the bone and a little fat along the edge. Prep: 25 minutes. Cook: 98 minutes. Rest: 0 minutes. Total time: 123 minutes. Serves: 4. About 1020 kcal and 39 g protein per serving.

Ingredients

  • 1 kg Suffolk lamb ribs on the bone
  • 250 ml water
  • 15 ml oil
  • 1 medium onion (150 g)
  • 1 teaspoon dried Moroccan mint
  • 1/2 teaspoon chilli flakes
  • 1 teaspoon salt
  • 1 kg small potatoes
  • 1500 ml water
  • 1 teaspoon salt
  • 30 ml oil
  • 2 celery stalks
  • 1 large red pepper (200 g)
  • 15 g fresh parsley

Preparation

1. Pat the ribs dry with paper towels and cut them into portions. Finely chop the onion. 2. Put the ribs in a pot with 250 ml water, 15 ml oil, the onion, dried mint, chilli flakes and 1 teaspoon salt. Cover and simmer over low heat for 60 minutes, until the meat is tender. 3. Meanwhile, boil the potatoes whole, with their skins on, in 1500 ml water and 1 teaspoon salt for 20 minutes, until a knife tip slides into them easily. Drain, peel and halve them. 4. Heat 30 ml oil in a frying pan and fry the potatoes for 8 minutes, turning them until golden. 5. Chop the celery stalks and dice the pepper. Add them to the ribs, take off the lid and simmer for another 10 minutes, until most of the liquid has reduced and the vegetables are soft. Sprinkle with chopped fresh parsley and serve with the potatoes.

Notes

You can leave out the chilli flakes; dried Moroccan mint can be replaced with the same amount of regular dried mint. The ribs keep in the fridge for up to 3 days, but the fried potatoes lose their crisp crust in storage. Serve with green salad and a well-chilled glass of off-dry white wine. For four servings, I get started more than two hours before the meal, because the slow simmering and browning take time. Choose ribs cut into pieces of similar size so they become tender at about the same pace. If the pieces have a lot of fat on the outside, trim some off before simmering; the cooking liquid will reduce around the meat more easily at the end.

Frequently asked questions

What should I do if the lamb is still tough after an hour?

Add 100 ml water, cover the pot and simmer for another 10 minutes. Check again to see if the meat comes away from the bone easily.

Can I use new potatoes?

Yes. Boil them whole, with their skins on, for about 15 minutes, then halve and brown them.

Why is there still too much liquid in the pot?

Take out the ribs and simmer the liquid uncovered for another 5 minutes, then put the meat back in. If the liquid has already reduced, serve it straight over the ribs.
