The next day, melt the butter in a large pot and add the pieces of guinea fowl, browning them over medium heat. While the meat is browning, remove the cores from the apples. Half are left with the skin, half without. The ones with skin are sliced thinly, the others are diced. As soon as the meat is browned, remove it from the pot and keep it warm, covered. In the remaining fat, first sauté the apples with skin until they become golden and soften slightly. Remove the sliced apples, draining them well from the fat, and keep them warm, covered. In the pot, add the sugar and the diced apples. Stir constantly, and when it starts to smell like caramel, add the reserved warm meat along with the juices it released, sauté for 2-3 minutes, and deglaze with broth.
