Lemon and Parmesan chicken breast with potatoes

The lemon goes over the potatoes, and lemon and Parmesan chicken breast with potatoes bake together in one dish, with a cup of water. After an hour, the potatoes soften, the chicken stays in pieces, and the grated Parmesan softens on top while the dish is hot. I cut the breast into similarly sized cubes. Preparation: 15 minutes. Ingredients
- 500 g boneless skinless chicken breast
- 1 tablespoon olive oil
- 1 teaspoon chicken seasoning
- 1 teaspoon herb salt
- 1/2 teaspoon ground pepper
- 500 g potatoes
- 1/2 lemon
- 240 ml water
- 30 g grated Parmesan
- 15 g parsley
Preparation
1. Preheat the oven to 200°C. Pat the chicken breast dry with paper towels and cut it into cubes. Toss it with the oil, chicken seasoning, herb salt and pepper. 2. Cut the potatoes into cubes and toss them with the juice of half a lemon and the herb salt. 3. Put the chicken and potatoes in an ovenproof dish and pour in 240 ml of water. 4. Bake for 60 minutes, until the potatoes are soft and the chicken is cooked through. 5. Take the dish out of the oven. Grate the Parmesan over the top and sprinkle with the chopped parsley.
Notes
Serve it with a green salad; it’s a bit like a tray of roast potatoes, except the chicken cooks alongside them. It keeps in the fridge, in a covered container, for up to 3 days. Waxy potatoes hold their shape better, while potatoes cut into large cubes may still be firm after an hour. When I double the amount, I split it between two dishes. Parmesan contains dairy; the herb salt can be replaced with 1 teaspoon of fine salt.
