Bread with Whole Wheat Flour and Flax Seeds

To prepare a delicious and healthy bread, we start by mixing in a large bowl type 000 white flour with whole wheat flour. It is important to choose a bowl with a generous diameter, as we will knead the dough directly in it, thus avoiding the scattering of ingredients. After the two types of flour have been well combined, we add salt and yeast, making sure that the salt is placed away from the yeast, so as not to inhibit its activity. We then add flax seeds, which not only provide a subtle flavor but also a pleasant texture. We begin to add water gradually, mixing with our hands until all the flour is incorporated. The dough will initially be sticky and soft, but don’t worry! If you feel it is too wet, you can add a little flour or, conversely, if it is too dry, a splash more of water. Once the flour is completely integrated, we place the dough on a lightly floured work surface and begin to knead it with the energy and dedication of a true bakery master. We knead for about seven minutes until the dough becomes elastic and smooth. After this stage, we let the dough rise in a warm room, covered with a bowl or a towel, for about an hour. It is essential that the dough is protected from drafts to rise evenly. While the dough is rising, we prepare the baking tray. We grease a large tray with oil or line it with baking paper, making sure it is ready to receive the dough. Once the dough has risen beautifully, we place it back on the floured work surface, knead it gently to give it the desired shape, then shape it into a round form. We place the dough in the prepared tray and let it rise in the tray for another hour. Once the resting time has elapsed, we preheat the oven to 230 degrees Celsius. Before placing the bread in the oven, we sprinkle a little flour on its surface and make a few deep cuts, which will not only help with even baking but also add an artistic touch. The bread bakes for about 35 minutes until it develops a golden and crispy crust. After it is baked, we let it cool on a rack to allow steam to escape and avoid a damp crumb. This bread can be enjoyed plain or with various toppings, being a perfect choice for any meal.
