Salmon Wallet with Dutch Sauce

In a saucepan, we start by sautéing fresh mushrooms, sliced thinly, with a little butter, allowing them to sweat for 2-3 minutes. We add a few red peppercorns to give them a slightly spicy flavor and 2 tablespoons of white wine to enhance the aroma. We stir constantly to ensure the mushrooms do not stick to the bottom of the pan. This step is crucial as the mushrooms will release their natural juices, and the combination with the butter and wine will create a delicious base. Meanwhile, we prepare the salmon fillets. They are sprinkled with specific fish spices that will enhance the delicate flavor of the salmon. We brush each fillet with a thin layer of mustard, which will add a note of flavor and help create a delicious crust during baking. To enhance the flavor intensity, we also sprinkle a few red peppercorns on top. The next step is to prepare the pastry sheets. We cut them into rectangles, making sure they are large enough to wrap around the salmon fillets. In the center of each rectangle, we place a layer of mushrooms, followed by a salmon fillet, and then another layer of mushrooms. This way, each bite will be full of rich flavors and diverse textures. After we have wrapped all the fillets, we brush them with a drizzle of olive oil on top to give them a golden and crispy crust at the end. We bake these delicious parcels in a preheated oven at 180 degrees Celsius for a maximum of 20 minutes. It is important to carefully monitor the baking time, as we want the salmon to be perfectly cooked. Five minutes before taking the parcels out of the oven, we prepare the hollandaise sauce, which will complement this main course with a touch of elegance. In a bain-marie, in a bowl placed over a pot of hot water, we whisk an egg yolk with a little salt and 2 tablespoons of white wine. Using a whisk, we stir constantly to avoid the egg from curdling. As the sauce thickens, we add 2-3 drops of wine vinegar or lemon juice, a pinch of mustard, and a tablespoon of butter. If we notice that the sauce becomes too thick, we can adjust the consistency by adding 1-2 tablespoons of wine. Finally, we serve the hot salmon parcels alongside the hollandaise sauce, creating a perfect contrast between the rich flavor of the fish and the finesse of the sauce. This recipe will surely impress any guest, turning an ordinary meal into a true culinary experience.
