Barozzi Cake

To create a delicious cake that impresses with its flavor and texture, we will follow the detailed steps of this recipe. We start by gathering the necessary ingredients: 200g of dark chocolate, 100g of butter, 50g of coffee grounds, 4 egg yolks, 100g of sugar, 50ml of rum, 100g of ground almonds, 4 egg whites, and a pinch of salt. The first step in preparing the cake is melting the chocolate and butter. In a pot, over low heat, we combine the two ingredients, stirring continuously with a wooden spoon. It is important to be patient, as we want to achieve a creamy and smooth consistency. Once the mixture becomes uniform, we add the coffee grounds, continuing to stir for about 2 minutes, keeping the heat at a minimum. Once the mixture is well integrated, we remove the pot from the heat and let it cool to room temperature, stirring periodically to prevent a crust from forming. Meanwhile, we carefully separate the egg yolks from the egg whites. We will mix the yolks with the sugar until we obtain a light-colored and fluffy mixture. Then, we add the rum, continuing to mix to incorporate the flavors. Next, we add the ground almonds, stirring until the mixture becomes homogeneous. Now, it is time to combine the chocolate mixture with the yolk mixture. We do this gradually, using a spatula and being careful not to lose the air in the mixture. In a separate bowl, we will beat the egg whites with a pinch of salt at high speed until we obtain a stiff and glossy foam. This is essential for giving the cake a light and airy texture. The beaten egg whites will be incorporated into the chocolate mixture with a folding motion, from the bottom up, to preserve all the accumulated air. Once the mixture is well integrated, we prepare to bake the cake. We line a baking tray with parchment paper after greasing it with a little butter to prevent sticking. We pour the mixture into the tray and gently level it with the spatula. The cake is baked in the preheated oven at 180 degrees Celsius for 20 minutes. After baking, we let it cool slightly in the tray, then transfer it to a rack to cool completely. Once the cake has cooled, we can slice and enjoy it, relishing the delicious combination of chocolate, almonds, and coffee flavor. This is a perfect choice for any special occasion or simply to pamper guests.
