The yogurt will add moisture and a pleasant taste, contributing to the delicacy of the dessert. Once we have a uniform mixture, we gradually add the oat bran, wheat bran, and psyllium. These ingredients are rich in fiber and will provide important nutritional value as well as an interesting texture. We use the mixer to thoroughly incorporate them, ensuring that no lumps remain. The next step is to add the starch and cocoa powder, mixing very well again. The cocoa will provide an intense chocolate flavor and color, while the starch will contribute to the final structure of the cake. Once all the ingredients are well integrated, we fold in the beaten egg whites. It is important to add them carefully using a spatula and to mix with gentle up-and-down motions. This way, we ensure that the air in the egg whites remains in the batter, making the cake fluffy and light. The obtained batter is poured into a pre-prepared silicone mold. On top, we arrange the cherries, which must be well washed and pitted. They will not only add a sweet-tart flavor but also enhance the appearance of the cake.
