To prepare a delicious gazpacho, you need the following ingredients: 6 ripe tomatoes, 1 cucumber, 1 red bell pepper, 1 green bell pepper, 1 small onion, 2 cloves of garlic, 50 ml of extra virgin olive oil, 30 ml of red wine vinegar, salt and pepper to taste. These fresh ingredients will create a vibrant soup, full of nutrients that will revitalize your body. Start by washing all the vegetables well. The tomatoes can be blanched to remove the skin more easily, but this step is optional; if you prefer a more rustic texture, you can leave them with the skin on. Cut the tomatoes into large cubes, and the cucumber and peppers into smaller pieces. The onion and garlic should be peeled and finely chopped. Add all the chopped vegetables to the blender, along with the olive oil, vinegar, salt, and pepper. Blend the ingredients at high speed until you achieve a homogeneous mixture. If you prefer a smoother soup, you can strain the gazpacho through a sieve to remove the larger pieces. Once you have achieved the desired texture, place the soup in the refrigerator for at least two hours, so the flavors can combine and intensify. To add an extra burst of flavor, you can prepare a vegetable salsa to accompany the gazpacho. Use tomatoes, cucumbers, peppers, and onion, diced into small cubes. Mix them with a little olive oil, vinegar, and season with salt and pepper. This salsa will not only bring a contrast of textures but also a note of freshness and color to the plate. Preparation

Gazpacho is very easy to prepare: all the vegetables are cleaned and chopped (the size doesn't matter). The bread is soaked in a little cold water to soften it. Then, cold water is gradually added to the mixture, adjusting it to a thinner consistency, unless you have the patience to let the soup sit in the refrigerator for 24 hours to dilute itself, which I recommend as the taste changes considerably. For those who want a finer soup, it can be passed through a sieve. Let it macerate for a few hours. If not, it can be served immediately once cooled. Salsa is prepared just as easily; the vegetables are finely chopped, seasoned with salt, pepper, and olive oil. Bread croquettes rubbed with garlic can also be made. Gazpacho is served cold, with a spoonful of salsa and croutons on top.
