Sour cherry and chocolate cake

Dessert - Sour cherry and chocolate cake by Ofelia D. - Recipia

Sour cherry and chocolate cake has slightly tart fruit beneath a soft sponge, topped with cool, airy cream. Eggs and butter give the sponge a tender texture, and the round portions show the cherries at the base of each piece. I like to keep the cream chilled until it holds its shape before putting it in a piping bag. Preparation: 25 minutes. Cooking: 67 minutes. Resting: 3 hours and 10 minutes. Total time: 4 hours and 42 minutes. Servings: 12. About 350 kcal and 7 g of protein per serving.

Ingredients

  • 500 ml water
  • 200 g Fine Carre dark chocolate from Lidl
  • 220 ml whipping cream
  • 800 g pitted sour cherries
  • 5 tablespoons brown sugar
  • 80 g butter with 80% fat
  • 8 egg yolks
  • 8 egg whites
  • 1/8 teaspoon salt
  • 8 tablespoons sugar
  • 8 tablespoons flour
  • 10 g baking powder

Preparation

1. Heat 500 ml water in a saucepan for a double boiler. Set a bowl with the dark chocolate and whipping cream over it and stir for 5 minutes, just until the chocolate melts; the mixture should not boil. Transfer the bowl to the fridge for 2 hours, until the cream is cold and firm. 2. Heat the oven to 180 °C. Put the sour cherries in a 24 × 36 cm baking tray lined with baking paper, toss them with the brown sugar and bake for 30 minutes, until they release their juice and the syrup starts to thicken. 3. Take the tray out and drain the syrup from the cherries. Line the tray again with baking paper and arrange the drained fruit in a single layer. 4. Melt the butter in a small saucepan over low heat for 2 minutes, then leave it to cool for 10 minutes. Mix it with the egg yolks. 5. Beat the egg whites with the salt until foamy, add the sugar and keep beating until you have stiff meringue. Fold in the yolks and butter with slow, upward strokes, then add the flour and baking powder. 6. Spread the batter over the sour cherries and bake at 180 °C for 30 minutes, until a toothpick inserted into the sponge comes out clean. 7. Turn the cake out onto another tray as soon as you take it out of the oven. Peel off the baking paper and leave it to cool for 1 hour, then cut out discs. 8. Whip the cold cream until fluffy and holding its shape. Put it in a piping bag and decorate each disc.

Notes

The 24 × 36 cm tray makes for a thin sponge, and frozen sour cherries can release a lot of syrup; drain them well before adding the batter. In my freezer, the sour cherries seem to multiply over winter, and here I use them whole, without the stones. The cake reminds me of an upside-down cake, only the portions are small and have cream on top. I make it a few hours before the meal; keep it covered in the fridge for up to 3 days. It contains gluten, eggs and dairy, and I serve it with black tea.

Frequently asked questions

Can I use fresh sour cherries?

Yes. Use 800 g pitted fresh sour cherries and leave them in a strainer for 5 minutes if they are very juicy.

Why did the sponge sink after baking?

It can happen if the egg whites weren’t beaten until firm enough or if the oven was opened too early. Don’t open the door during the first 20 minutes.

Can I use milk chocolate for the cream?

Yes, replace the 200 g dark chocolate with 200 g milk chocolate; the cream will be sweeter.

What size should the cutters be?

A round cutter about 6 cm wide makes small portions, with fruit visible on each disc.

What should I do if the chocolate cream stays too soft?

Put the cream in the fridge for another 20 minutes, then beat it again briefly.

Can I use sweet cherries instead of sour cherries?

Yes, use the same 800 g, pitted, and reduce the brown sugar to 3 tablespoons, as sweet cherries are sweeter.
