We mix the two ingredients for about 4-5 minutes, until the mixture becomes fluffy and light in color. Once we have achieved this texture, we add the egg yolks, one at a time, mixing well after each addition so that they are fully incorporated. After the yolks are well integrated, we move on to the next step: we add the cheese, sour cream, and vanilla essence. It is essential that the cheese is well drained to avoid excess moisture in the mixture. We continue to mix until we obtain a smooth and thick cream, which will form the delicious base of our dessert. Now it is time to add the ingredients that will add flavor and texture. We use a spoon to incorporate the raisins, lemon zest, chopped almonds, and candied fruits. The latter will add a touch of sweetness and vibrant color to the dish. We mix everything carefully, ensuring that the ingredients are evenly distributed in the mixture. The next step is preparing the pot. We take a cheesecloth, dampen it, and wring it out well, then lay it in the pot in two layers, making sure the edges stay outside so we can fold the cream at the end. We pour the mixture into the pot, ensuring it is evenly distributed. Then, we fold the edges of the cheesecloth over the cream, thus creating a small 'blanket' that will help form the dessert. To help drain excess liquid, we place a weight on top, such as a plate, on which we can put a 1 kg sugar bag. This step is important to achieve a consistent texture. The dessert will sit in the refrigerator for at least 12 hours, during which the flavors will intensify, and the mixture will firm up. After the resting time is over, we carefully invert the pot onto a platter and remove the cheesecloth, revealing an elegant and appetizing dessert. We can decorate it with almonds and candied fruits, giving it an attractive appearance. It is a rich sweet, full of flavor and texture, which will surely become a favorite among loved ones.
