Rice Flour, Cornmeal and Coconut Cookies (Gluten-Free)

To prepare some delicious and aromatic cookies, we start by making sure we have all the necessary ingredients at hand. Here is the list of ingredients: 200 g of soft butter, 150 g of sugar, 1 packet of vanilla sugar, the grated zest of one lemon, a pinch of salt, 300 g of flour, and optionally, milk and grated coconut for decoration. The first step is to mix the soft butter, which should be at room temperature, together with the sugar and vanilla sugar. This combination will create a fluffy and airy cream. Then we add the grated lemon zest, which will give the cookies a fresh and delicious aroma, and a pinch of salt to balance the sweetness. Next, we start to integrate the flour, mixing with our hands until we obtain a homogeneous dough. If the dough is too hard, feel free to add a little milk, one tablespoon at a time, to reach the desired consistency. After we have obtained the dough, we cover it with plastic wrap and put it in the refrigerator for about an hour. This will allow the butter to firm up a bit, making the dough easier to work with. In the meantime, we can prepare the baking tray by placing parchment paper on it. Once the dough has rested, we sprinkle a little flour on the work surface and use a rolling pin to roll out the dough to about 1 cm thick. Now comes the fun part! Using a cutter or a mold, we cut the cookies into various shapes, whether they are hearts, stars, or circles. The cookies are placed on the prepared tray, making sure to leave a little space between them, as they will spread while baking. If you like, you can lightly moisten them with milk and sprinkle grated coconut on top for extra flavor and texture. The cookies bake in a preheated oven at 180°C for about 10 minutes. It is important to keep an eye on them, as the baking time may vary depending on the oven. When they turn golden and the aromas spread throughout the kitchen, they are ready to be taken out of the oven. Once cooled, we dust them with powdered sugar for an elegant look and extra sweetness. Now they are perfect to be enjoyed alongside a cup of tea or coffee!
