Vegan black bean chili with sweet potato

Vegan - Vegan black bean chili with sweet potato by Nina B. - Recipia

Vegan black bean chili with sweet potato simmers in one pot with tomatoes, peppers, cumin and smoked paprika. The sauce turns thick as the potato softens, with tender beans that still hold their shape; lime stirred in at the end keeps the finish bright. I cut the potato into small, even cubes so it cooks through on schedule. Prep: 15 minutes. Cook: 37 minutes. Total time: 52 minutes. Serves 4. About 350 kcal and 14 g protein per serving.

Ingredients

  • 1 tbsp olive oil
  • 1 medium yellow onion (diced)
  • 1 red bell pepper (diced)
  • 3 garlic cloves (minced)
  • 1 tbsp tomato paste
  • 2 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 450 g sweet potato (peeled and diced)
  • 400 g crushed tomatoes
  • 300 ml vegetable broth
  • 3/4 tsp fine salt
  • 2 x 400 g cans black beans (drained)
  • 1 tbsp lime juice
  • 2 tbsp fresh cilantro (chopped)

Preparation

1. Heat the olive oil in a large pot over medium heat. Add the onion and red bell pepper and cook for 6 minutes, stirring now and then, until softened. 2. Stir in the garlic, tomato paste, chili powder, smoked paprika and cumin. Cook for 1 minute, until the spices smell fragrant. 3. Add the sweet potato, crushed tomatoes, vegetable broth and salt. Bring to a simmer, cover and cook for 22 minutes, stirring once or twice. The potato should be nearly tender. 4. Stir in the drained black beans and simmer uncovered for 8 minutes. The chili will thicken and the beans should be hot through. 5. Take the pot off the heat and stir in the lime juice. Scatter over the chopped cilantro.

Notes

Cut the sweet potato into roughly 2 cm cubes; much larger pieces may still be firm when the beans are ready. Keep the simmer gentle and stir the bottom once or twice; if the chili thickens before the potato softens, add broth a splash at a time. For a pantry swap, use 480 g drained kidney beans in place of the black beans. Serve over rice or with warm flatbread. Leftovers keep in a covered container in the fridge for up to 3 days. Reheat gently with a little water or broth, since the chili thickens as it sits.

Frequently asked questions

Can I use dried black beans?

Yes. Soak 200 g dried beans overnight, then cook them separately until fully tender before adding them to the pot.

What can I use instead of sweet potato?

Use 450 g peeled butternut squash cut into 2 cm cubes; start checking it after 16 minutes of simmering.

How can I make the chili hotter?

Add 1/4 tsp cayenne pepper with the other spices, then taste before adding more.
