Cherry cheesecake (no-bake)

To prepare a delicious cookie and cream cheese cake, start by grinding the cookies in a food processor or in a plastic bag using a rolling pin until you get a fine powder. These will form the base of our cake, giving it a crunchy and flavorful taste. Once the cookies are ground, add the melted butter, sugar, and a packet of vanilla sugar. Mix everything using a spatula or a wooden spoon until the mixture becomes homogeneous and has a consistency similar to wet sand. Preheat the refrigerator, then take a cake pan with removable edges, about 25 cm in diameter. Pour the cookie mixture into the pan and level the surface well, gently pressing with the bottom of a glass or with a spoon to obtain an even layer. Place the pan in the refrigerator to harden while you prepare the delicious cream. For the cream cheese, prepare the gelatin according to the instructions on the packet. This is an essential step, as the gelatin will help stabilize the cream. In a large bowl, add the cheese, sugar, and vanilla sugar. Use a mixer to beat the ingredients until you obtain a smooth and airy cream. It is important to ensure that the cheese is well mixed, as any lumps will affect the final texture of the preparation. Gradually add the prepared gelatin, continuously mixing to incorporate the ingredients well. Then, carefully fold in the whipped cream, being careful not to let it deflate. This will add volume and a slightly fluffy texture. Once the cream is ready, pour it evenly over the cookie base, leveling it with a spatula. Arrange the pitted cherries from the compote, ensuring they are pitted so there are no unpleasant surprises when serving. On top, prepare the fruit gelatin according to the instructions on the packet and carefully pour it over the cherries, creating an attractive and colorful layer. Put the pan back in the refrigerator and let it cool for 3-4 hours, but ideally, leave it overnight. This way, all the flavors will combine, and the cake will be perfectly set. When you are ready to serve the cake, carefully remove the edges of the pan, slicing it with a sharp knife. Enjoy each slice of this delicious cake, which will surely impress anyone who tastes it!
