Baked zucchini and bacon rolls

Appetizers - Baked zucchini and bacon rolls by Nadia O. - Recipia

Baked zucchini and bacon rolls brown lightly in a pan, then bake until the zucchini is tender and the bacon slices curl around it. I put them on the appetizer platter, next to the finger foods; my slices came out a bit uneven, so I cut them as close to the same width as I can. Prep: 20 minutes. Cook: 30 minutes. Rest: 20 minutes. Total time: 70 minutes. Servings: 4. About 340 kcal and 9 g of protein per serving.

Ingredients

  • 2 medium zucchini (400 g)
  • 1/2 tsp salt
  • 50 ml oil
  • 100 g very thinly sliced bacon
  • 50 g cheese (optional)

For the sauce

  • 150 g sour cream
  • 1 garlic clove (5 g)

Preparation

1. Wash and peel the zucchini, then cut them lengthwise into 9 thin slices in total. 2. Sprinkle the slices with salt and leave them for 10 minutes. 3. Heat the oil in a pan. Fry the slices in batches for 10 minutes in total, turning them over to cook on both sides, until they soften a little and take on some color. Transfer them to paper towels. 4. While they are still slightly warm, roll up a slice of zucchini with a slice of bacon. Put 3 rolls on each skewer and arrange them in an ovenproof dish. 5. Bake at 200°C for 20 minutes, until the bacon starts to brown. If using cheese, sprinkle it over the top 2 minutes before taking the dish out of the oven. Let the rolls cool for 10 minutes. 6. For the sauce, mix the sour cream with the crushed garlic. Serve it alongside the rolls.

Notes

Medium zucchini with firm skin are easier to cut into long strips. Very large ones have a more watery center, and the slices can tear when rolled; cut them wider if the zucchini are large. Very thick bacon is hard to bend around the strips, so choose thin, flexible slices. You can make them a few hours ahead and keep them covered in the fridge, separate from the sauce; the cooked dish keeps for up to 3 days in the fridge. The cheese is optional; if you add it, the appetizer contains dairy. Arrange them on a platter alongside other appetizers and keep the sauce in a separate bowl.

Why do the rolls come undone?

Place the end of the bacon underneath; if it still comes undone, secure the roll with a 6 cm toothpick.
