Gnocchi in Tomato Sauce (Sorrentina Style)

To prepare a delicious serving of gnocchi with tomato sauce and mozzarella, it is essential to start with the potatoes. Although it is ideal to boil them with their skins on to preserve their flavor and moisture, if time is limited, you can peel and microwave them. So, boil the potatoes until they are soft, then let them cool slightly. Once they have cooled, mash them with a fork or potato masher to obtain a smooth and creamy puree. After the puree has cooled slightly, place it on a clean surface and make a well in the center. In this well, add a beaten egg, a pinch of salt, olive oil, and flour. Start kneading the mixture well until it becomes homogeneous and easy to handle. It is important not to overdo it with the flour, as the gnocchi could become too hard, losing their delicate texture. If you feel the dough is too sticky, dust your hands and the surface with a little flour, but avoid adding too much to the mixture. Once you have achieved the desired dough, form thick rolls the size of your thumb and cut them into uniform-sized cylinders. You can opt for larger or smaller sizes, depending on personal preferences. Using a wooden tool or the tines of a fork, create small grooves on each gnocchi so that the sauce adheres better to them. Meanwhile, bring a pot of salted water to a boil. When the water starts to boil, reduce the heat and carefully add the gnocchi. Let them simmer until they rise to the surface, which usually takes a few minutes. Using a slotted spoon, remove the gnocchi from the water and transfer them to a baking dish. To prepare the tomato sauce, heat a little olive oil in a pan and add a whole clove of garlic, slightly crushed. Let the garlic sauté lightly, then add the tomato puree, salt, and basil. Simmer the sauce for a few minutes until the flavors blend well. Finally, remove the garlic clove from the sauce. Over the gnocchi, pour the tomato sauce, add cubes of mozzarella, and if you have it, grated parmesan. If you don’t have parmesan, a slice of melted cheese torn into pieces will work just as well. For added flavor, don’t forget the fresh basil leaves, which add an unmistakable taste to the dish. Place the dish in the oven to gratin, or microwave it if you want a quick solution. This way, you will achieve a savory dish, perfect for a family dinner or with friends, which will surely impress with its simplicity and refinement!
