Tuna Salad with Rice

To prepare a delicious and refreshing salad, start by boiling the rice. Choose a long-grain rice that maintains its shape and texture after cooking. In a large pot, add water and a pinch of salt, then let it boil. Once the water reaches a boiling point, add the rice and cook according to the package instructions, usually about 10-12 minutes. After the rice is cooked, drain it in a sieve and let it cool on a wide plate so it doesn't clump together. Meanwhile, prepare the other ingredients. Open the can of tuna and drain it well to remove excess water. This step is essential to prevent the salad from becoming too wet. In a large bowl, combine the cooled rice, peas (you can use either fresh or frozen peas), diced tomatoes, and finely chopped green onions. Make sure all the ingredients are well distributed in the bowl so that each serving contains a balanced mix of flavors. On top of this mixture, add the tuna in large chunks. It is important to stir gently to avoid breaking the tuna, thus keeping its juicy and pleasant texture. In a small bowl, prepare the salad dressing: squeeze the juice from half a lemon and combine it with extra virgin olive oil, salt, and freshly ground pepper. The olive oil will add a touch of refinement, while the lemon juice will provide a pleasant acidity, balancing the flavors of the ingredients. Pour the dressing over the salad and mix gently, being careful not to crush the ingredients. It is essential that the dressing is evenly distributed so that each bite is full of flavor. Finally, garnish the salad with a wedge of lemon, which will add a fresh look and invite serving. This salad is perfect for a summer meal, being easy to prepare and extremely refreshing. It can be served as a main dish or as a side, bringing a splash of flavor and color to your table.
