Chicken with brown mushrooms and Mu-Err

The mushrooms absorb the flavors and become tender. In the meantime, we prepare the rest of the ingredients. We take 200 grams of tofu and cut it into small cubes, seasoning it with a little salt and pepper. We place it in a non-stick pan with a splash of sesame oil and fry it over medium heat, carefully turning it until it becomes golden and crispy on all sides. The tofu will add a pleasant texture and a delicious taste to our dish. In another pan, we add a tablespoon of olive oil and sauté a small finely chopped onion. We let it sauté for 2-3 minutes until it becomes translucent, then we add 2 finely chopped garlic cloves. The taste of garlic will bring a note of intensity and will perfectly complement the other ingredients. After the garlic starts to release its aroma, we add 150 grams of julienne-cut carrots and 100 grams of colored bell pepper cut into strips. We cook the vegetables for about 5 minutes, stirring constantly until they become slightly crunchy but do not lose their freshness. After the Mu-err mushrooms have boiled and soaked up the flavors of the soy sauce, we drain the excess water and add them to the vegetables in the pan. Finally, we incorporate the fried tofu, gently mixing to avoid breaking the tofu cubes. Now is the time to add a tablespoon of sweet chili sauce to give the dish a spicy and savory note. We taste and adjust the seasonings, adding more soy sauce if necessary. For a final touch, we can sprinkle some toasted sesame seeds and chopped green onion on top, which will add not only flavor but also an attractive appearance. We serve the dish warm, alongside a portion of basmati rice or rice noodles, to complete this healthy and flavorful meal. This combination of ingredients is not only delicious but also full of nutrients, suitable for both vegetarians and those who want to incorporate more vegetables and plant-based proteins into their diet.
