Carrot Cream Soup

To prepare a delicious and nourishing soup, we start by cleaning the carrots and onion. The carrots should be fresh, with a firm texture, and the onion should be medium-sized, preferably white or yellow, to provide a sweet taste to the soup. Once cleaned, we cut them into small cubes to cook evenly and integrate perfectly into the dish. We put the chopped vegetables to boil in a pot with water, adding a pinch of salt that will help enhance the flavors. We let the vegetables boil over medium heat, monitoring them to ensure they don't cook too much. In the meantime, we focus on the tomatoes. We select well-ripened tomatoes, with a vibrant color, which we peel. This step can be done either by quickly dipping the tomatoes in hot water or simply using a sharp knife. After peeling them, we grate them, thus obtaining a fresh tomato juice, full of flavor and color. After the vegetables have boiled, we remove them with a slotted spoon and transfer them to the blender bowl or, if you prefer, we can mash them with a fork. This way, we obtain a fine puree, which we add back into the water in which the vegetables boiled. This mixture will form the base of our soup. We now add the freshly prepared tomato juice, the two tablespoons of extra virgin olive oil, which will give the soup a special finesse, and season with salt and pepper to taste. We let the soup simmer on low heat for about a quarter of an hour, during which the flavors will blend harmoniously. It is the perfect time to enjoy the inviting aroma that spreads throughout the kitchen. Before serving, we add a handful of freshly chopped parsley, which will not only add a touch of freshness but will also visually enrich the dish. We mix well and let the soup sit for a few minutes to integrate the flavors. We serve the soup hot, perhaps alongside a slice of fresh bread or crunchy croutons.
