Diet Salmon and Medallion with Sorrel Sauce

To prepare a delicious salmon meal, we start with salmon fillets. Rinse them well under cold water, ensuring that no bones remain. It is important to have a clean base, so check each fillet carefully. Place them on a grill in a baking tray that can be used in the oven. Now, we season the fillets: we add salt and freshly ground pepper, then sprinkle chopped fresh dill, dried and finely chopped garlic, as well as fresh rosemary. If desired, drizzle with white wine, but this step is optional, depending on your preferences. Preheat the oven to 180°C (350°F) and place the tray with the salmon inside. Bake for 15 minutes, but if the fillets are thicker than 2 cm, you will need to extend the baking time. To check if the salmon is done, gently open the oven door; if you notice a whitish crust on its surface, it is a sign that it is almost ready. At this point, you can take the fish out of the oven and cover it with parchment paper and aluminum foil to keep it warm and juicy. Meanwhile, prepare the desired vegetables: carrots, parsnips, potatoes, or beans. Peel the vegetables and cut them into pieces of the same size, so they cook evenly. Place them in a sieve above a pot of boiling water, covering with a lid to retain the steam. Cook them until they become soft but still crunchy, so they maintain their pleasant texture. Serve the cooked vegetables alongside the cooked salmon and enjoy everything with a flavorful garlic sauce. Sprinkle finely chopped fresh rosemary on top for extra flavor. For a delicious variation, you can prepare salmon medallions with sorrel sauce. From a salmon fillet, cut out round pieces, making sure to remove the skin. The remaining scraps can be frozen for later use or fried in oil to be added to pasta dishes. In a pan, add oil and unrefined sugar, then place the pan over low heat. Once the oil is hot enough, add the salmon medallions, which have been seasoned with salt, pepper, dill, rosemary, and garlic. Fry them on both sides until you achieve a golden and crispy crust. Serve the medallions with sorrel sauce on top, sprinkling a little dried garlic for an intense flavor. This combination of flavors will turn an ordinary meal into an unforgettable culinary experience. Bon appétit!
