Black Radish Salad

To prepare a delicious and refreshing radish salad, the first step is to take care of the fresh radishes. Choose high-quality radishes with green, healthy leaves, as these are indicators of freshness. We start by peeling the radishes, making sure to remove any impurities. Then, we use a large grater, which will allow us to obtain crunchy and juicy strips, adding texture to our salad. Although some prefer to cut them into cubes, the large grater will enhance the radish flavor, making them more pleasant to taste. Once we have grated the radishes, we sprinkle them evenly with about a teaspoon of salt. The salt will not only help to enhance the flavors but will also draw out excess water from the radishes, leaving them firmer. After this step, we place the radishes in a stainless steel strainer and let them drain for about 40 minutes, but ideally, we should let them sit for an hour. This process will ensure a less watery and more concentrated flavor salad. After the radishes have drained, we transfer them to a large bowl. Here, we will take care of the onion. We use fresh onion, preferably red or white onion, which will add a pleasant contrast of flavor. Grate the onion and add it over the radishes. Mix well to combine the flavors, ensuring that each radish piece is coated in the onion's aroma. Next, we add a dressing to taste. You can opt for a simple mix of olive oil and balsamic vinegar, or for a more complex version with yogurt and herbs. Mix everything carefully, and if necessary, adjust with salt to achieve the perfect balance of flavors. Once the salad is well mixed, we transfer it to a beautiful salad bowl. We finish the dish with black or green olives, sliced or whole, for an extra touch of flavor and color. This radish salad is not only delicious but also full of vitamins, making it an ideal accompaniment to any meal. Enjoy it alongside grilled meat or as a healthy snack at any time of the day. Bon appétit!
