Once the chocolate has completely melted and has a creamy consistency, pour all the water in at once over the chocolate. Stir vigorously with a spatula or whisk until the mixture becomes homogeneous. It is essential to turn off the stove at this point to avoid overheating the mixture. Use an electric mixer or a hand whisk to ensure perfect integration of the water and chocolate. To achieve a cream with an ideal consistency, place the saucepan with the chocolate mixture over another vessel filled with ice cubes or in the sink, letting cold water flow alongside the saucepan. It is important to avoid splashing water into the saucepan as this can affect the final texture. Continuously stir until the cream becomes thick and creamy. If the chocolate does not harden enough, you may not have used high-quality chocolate that contains sufficient lecithin. Once you have obtained a homogeneous cream, put it in the freezer and wait for it to firm up a bit. Then, add the frozen cherries and mix well using an immersion blender or a regular blender. This step is crucial for achieving a uniform texture, and the frozen cherries will add a delicious flavor. For an even more intense aroma, incorporate a tablespoon of cherry liqueur or cherry brandy, along with a tablespoon of syrup from a jar of cherry jam. Carefully mix all the ingredients together. When the ice cream has hardened enough to be cut, insert the immersion blender into the mixture and blend again or transfer everything to a blender. The air introduced into the mixture will make the ice cream fluffier, mimicking the technique of ice cream machines that constantly churn. If, after this stage, the ice cream is still too soft, let it harden a little more in the freezer. Then serve this refined dessert, which is sure to impress anyone who tastes it. You can adjust the sweetness level by adding more tablespoons of syrup, depending on personal preferences.
