Spinach And Cheese Lasagna

To prepare a delicious spinach and cheese lasagna, the first step is to take care of the spinach. Wash the spinach leaves well under cold running water, then place them in a pot of boiling water with salt. Let them boil for about 3-5 minutes until they become tender. After boiling, drain the spinach and chop it finely. If you prefer a more rustic texture, you can leave the leaves whole, but make sure they are well washed. Meanwhile, prepare the lasagna noodles. Boil them in a separate pot in salted water, but do not cook them completely; let them boil only halfway. Once they are ready, drain them and set them aside. In a small pot, bring the tomato broth to a boil. If you opt for store-bought spaghetti sauce, make sure to choose a quality one. Add two tablespoons of pesto for a vibrant and fresh taste, along with minced garlic. Mix the ingredients well and let the sauce simmer for a few minutes until the flavors blend perfectly. Once it starts to boil, remove it from the heat and let it cool slightly. Now, let’s prepare the cheese filling. In a large bowl, mix the Ricotta cheese with grated mozzarella, being careful to adjust the amount of cheese according to your preferences. Add the two beaten eggs and the chopped spinach, mixing everything well. Don’t forget to season the mixture with salt and pepper to enhance the flavors. Prepare an oven-safe glass dish and place some of the tomato sauce at the bottom, diluting it with a little water. Layer some noodles on top, followed by a portion of the cheese and spinach mixture. Cover with a bit of tomato sauce, then repeat the process with another layer of noodles. On top, add a mixture of grated Parmesan and mozzarella, which will form a delicious crust. Finally, pour the remaining tomato sauce and cover the dish with aluminum foil. Preheat the oven to 180 degrees Celsius and place the dish inside for about 30-45 minutes. After this time, remove the foil and let the lasagna bake for another 5 minutes until a golden and appetizing crust forms. Finally, take the lasagna out of the oven and let it cool slightly before slicing. Serve it plain or alongside a glass of good quality wine and garlic bread for a meal that delights all the senses. This recipe will surely become a favorite among your friends and family. Enjoy your meal!
