We also prepare 2 liters of water, 300 grams of sugar, 2 lemons, and a teaspoon of fresh or dried yeast. Once we have gathered all the ingredients, we can get to work. First, we wash the lemons well under a stream of cold water, then we cut them into thin slices, being careful to remove the seeds, as they can give an unpleasant bitterness to the drink. In a large container, we pour the water, add the sugar, and stir until it completely dissolves. Then, we add the elderflowers, lemon slices, and yeast. It is important not to boil the water, as the heat can destroy the delicate flavors of the flowers. We mix all the ingredients well, then cover the container with a cheesecloth or a clean cloth, allowing the drink to ferment at room temperature for 3-5 days. It is recommended to stir the elderflower syrup from time to time to help the fermentation process. During this time, the flavors will combine, and a bouquet of tastes will form that will delight the taste buds. After the fermentation period is over, the elderflower syrup will become slightly effervescent and will take on a golden hue. We can strain it through a fine sieve to remove the flowers and lemon slices, then pour it into clean bottles, which we will seal well. It is ideal to keep the elderflower syrup in the refrigerator, where it will cool and be ready for consumption. Served with ice and perhaps with a few mint leaves, elderflower syrup becomes a refreshing drink perfect for hot summer days. 10 elderflowers are placed in a 10-liter jar of water, 1 lemon sliced, 1 kg of sugar or equivalent, 1 tablespoon of 9% vinegar, and 10 g of fresh yeast or 1 g of dry yeast.
