It is important not to overmix, just enough to bind the dough, so that we keep a tender texture. Even though the dough will be sticky, do not worry, this is the desired aspect. Form a compact ball from the dough, wrap it in plastic wrap, and let it rest in the refrigerator for at least 3 hours. This resting time will help develop the flavors and achieve an ideal texture. After 3 hours, take the dough out of the refrigerator and place it on a well-floured work surface. Sprinkle a bit of flour on the dough as well, then use a rolling pin to roll out a sheet about 8 mm thick. It is essential that the thickness is even to ensure uniform baking. Using a glass, cut out circles from the dough. These will be the base for our delicious snacks. For the filling, prepare a homogenized tomato paste with salt and oregano, thinned with a splash of olive oil. This sauce should be thick enough not to run off the dough. Spread a thin layer of filling on each dough circle, being careful to leave a free edge. On top, generously sprinkle grated Parmesan or cheese, which will add a savory taste and a golden crust. Place the filled circles, well spaced, on a baking tray lined with parchment paper. Preheat the oven to 180 degrees Celsius and insert the tray. Bake for 15-20 minutes or until the pastry is puffed, well-baked, and has a delicious golden color. These small delights are best served warm, but don't worry, they are just as tasty cold.
