Prune Cake with Raisins, Chocolate, and Butter Cream

Desert - Prune Cake with Raisins, Chocolate, and Butter Cream by Marina E. - Recipia

To start this delicious recipe, the first step is to preheat the oven to 180 degrees Celsius. This will ensure even baking and a perfect texture for the meringues. Next, carefully separate the eggs, keeping in mind that we will only use the egg whites. The remaining yolks can be used in other recipes, such as vanilla cream or a sauce, so don't lose them. In a large bowl, add the egg whites and a pinch of salt. Use an electric mixer to beat them at medium speed until they start to form foam. Then, gradually incorporate the sugar, continuing to mix. It is essential to add the sugar gradually to achieve a firm and glossy meringue. Continue to beat the egg whites until you achieve a stiff and shiny consistency, at which point you can add the baking powder and flour. Start to gently fold with a spatula to avoid deflating the meringue. Once the ingredients are well integrated, take a spoonful of the mixture and form small round meringues, placing them on a large baking tray lined with parchment paper. Here you can add raisins or milk chocolate chips, depending on your preferences. It’s a fun and enjoyable activity, perfect to share with little ones, who can get involved in decorating the meringues. After you finish shaping the meringues, place the tray in the oven and let them bake at medium heat for about 10-15 minutes. Check them occasionally to ensure they do not burn, as they can become golden on the edges very quickly. I ended up with two full trays, and the aroma that spread throughout the house was simply irresistible. In the meantime, you can prepare the cream. In another bowl, mix the soft butter with the powdered sugar, cocoa, and a splash of coffee. This combination will give the cream an intense taste and an appetizing appearance. Once the meringues have completely cooled, take two at a time and join them with the buttercream to create a delicious and attractive dessert. And there you have it, your meringues are ready! Enjoy!
