Simple Meringues

To prepare a delicacy worthy of the most refined tables, we will start with an essential ingredient: egg whites. They must be very fresh to achieve a perfect foam. In a clean, dry bowl, we will learn to beat the egg whites using an electric mixer on medium speed until they start to become frothy and form bubbles. It is recommended to use a stainless steel or glass bowl, as these do not retain grease, and the result will be much better. Once we have obtained a consistent foam, we add the sugar, but not all at once. It is important to sift the sugar beforehand to avoid clumping. Add two tablespoons of sugar at a time, mixing continuously on high speed. We continue to add the sugar gradually, beating the egg whites until we no longer feel the graininess of the sugar. The more we mix, the airier and more stable the foam will be. To add a touch of originality, we can incorporate the juice from a handful of raspberries, which will provide not only an appetizing color but also a delicate and fresh aroma. It is essential to strain the juice to remove the seeds, so that the final texture remains smooth. After obtaining a glossy and firm foam, we prepare to bake the mixture. We preheat the oven to a low temperature of about 120 degrees Celsius, and during baking, it is important to leave the oven door slightly open. This trick allows moisture to escape, thus preventing the formation of a too-thick crust on the surface of the meringue. The baking time is approximately 70 minutes, but it will also depend on your oven's specifics. Once the baking time has expired, it is recommended to let the meringue cool in the oven with the door ajar. This step helps prevent the meringue from cracking, giving it a perfect, fluffy texture with a slightly crispy exterior. The result will be a delicious meringue that can be served plain, with a berry sauce, or with whipped cream and fresh fruits. This recipe is a true delight for dessert lovers and will leave an unforgettable impression, even on the first try!
