Making the dough Put the flour in a large bowl. Add the cold butter, cut into small pieces, and crumble it with your fingertips until you get a sandy texture. Sprinkle a pinch of salt. Add the egg, the tablespoon of vinegar, and start to gather the dough. Gradually add the cold water, mixing just until the dough comes together and there is no dry flour left. Do not over-knead.
