Nut Cream

Wash the apricots and let them dry, spread out on a towel, to prepare them in the best way for our delicious recipe. Once they are dry, cut them into small pieces, making sure to save a few strips for the final decoration of the dish. These will add an attractive look and an interesting texture. Next, wash the raisins and let them drain in a sieve, to remove the excess water. These dried fruits will bring a pleasant sweetness and an intensified aroma to the dish. In a pot, place the walnut kernels and add water with a pinch of salt. Bring to a boil and let simmer for 3-5 minutes, to soften the nuts and make them easier to peel. After this time, drain the nuts and remove the skin as well as you can, to obtain a clean and tasty kernel. Chop or grind the nuts finely so that they integrate perfectly into the cream you will prepare. In a separate pot, place the chopped nuts, along with 200 ml of water and half of the sugar amount. Stir constantly until the sugar is completely dissolved and the mixture begins to take on a creamy consistency. Once the sugar has dissolved, add the rice flour diluted in a little cold water. Continue to stir over low heat until the cream thickens, being careful not to let it stick to the bottom of the pot. After the cream reaches the desired consistency, set it aside and let it cool slightly. At this point, combine the raisins and the chopped apricots with the remaining sugar. Place this mixture over the warm cream, stirring gently to allow the sugar to melt and integrate into the composition. The result will be a delicious cream, full of flavors and textures. Serve the cream both hot and cold, in bowls or plates, decorated with the slices of dried apricots and raisins you saved. This recipe not only delights the taste buds but also the eyes, bringing a splash of color and freshness to your table.
