Pumpkin cream soup

We chop the onion roughly and sauté it a little in hot oil, stirring constantly to ensure it browns evenly. When it becomes transparent, we add the apple and potatoes, diced into small cubes. We leave them in the pan for about five minutes, stirring occasionally to allow the flavors to combine. It's important not to cook them too much, as we want to keep the crunchy texture of the potatoes and the sweetness of the apple. After the potatoes and apple have absorbed the onion's flavor, we add the spices. We sprinkle salt and pepper to taste, then add a teaspoon of sweet paprika to give a splash of color and a slightly smoky flavor. If you're feeling adventurous, you can also add a pinch of nutmeg, which will enhance the flavors and bring a hint of warmth to the dish. Once all the ingredients are well mixed, we add two cups of vegetable broth or water, depending on your preference. We cover the pan with a lid and let it simmer on low heat for about 20 minutes, or until the potatoes are soft but not falling apart. This is the perfect time to check the consistency and adjust the seasonings if necessary. Once the vegetables are cooked, we take part of the mixture and put it in a blender, blending until we achieve a creamy soup. If you want a thinner consistency, you can add a little water or extra broth. Then, we pour the soup back into the pan and mix everything well to ensure all the flavors are integrated. For a final touch, we can add a few fresh parsley or dill leaves for an extra burst of freshness and color. We serve the soup hot, garnished with crunchy croutons or toasted seeds, which will add a pleasant texture and a delicious contrast. This recipe is not only nutritious but also comforting, perfect for a chilly day or when we feel the need for a warm and healthy dish. Enjoy every spoonful and savor the enticing flavors!
