Vegan cocoa and walnut muffins

For dessert, vegan cocoa and walnut muffins bake for 40 minutes, until a toothpick comes out clean. The batter with oats and rosehip paste keeps them soft inside, with a browned top. Ingredients
- 200 g sugar
- 1 packet baking powder (10 g)
- 1 packet vanilla sugar (8 g)
- 50 g ground walnuts
- 60 g rosehip paste
- 90 ml oil
- 240 ml mineral water
- 2 tablespoons cocoa powder (10 g)
- 30 g rolled oats
- 250 g white flour
- 1/2 teaspoon ground cinnamon
- 10 g powdered sugar
Preparation
1. Preheat the oven to 175°C. Put the sugar, baking powder, vanilla sugar, ground walnuts, rosehip paste, oil, mineral water and cocoa powder in a bowl. Mix until smooth. 2. Add the oats, flour and cinnamon, then mix until no traces of flour remain in the batter. 3. Place paper liners in the silicone molds and the muffin tin. Fill the molds three-quarters full. 4. Bake for 40 minutes at 175°C, until a toothpick inserted into a muffin comes out clean. Take the muffins out of the oven and the molds, then leave them to cool for 30 minutes on a kitchen towel. 5. Dust the cooled muffins with powdered sugar.
Notes
I serve them with a cup of black tea. Rosehip paste works best when it’s thick; a very runny one can thin the batter. Smaller molds may bake more quickly, so check them before the time is up. Keep them in a sealed container for up to 3 days in the fridge. For a different flavor, you can replace the walnuts with the same amount of ground hazelnuts; the muffins contain gluten and nuts.
