No-rise pizza with ham, vegetables and mushrooms

No-rise pizza with ham, vegetables and mushrooms bakes with a thin crust and browned edges. Ketchup with basil stands in for the sauce, while corn, peas, pepper and mozzarella make a generous topping, without waiting for the dough to rise. I cut it into narrow slices so everyone gets some of the browned edge. Prep time: 20 minutes. Cook time: 20 minutes. Total time: 40 minutes. Servings: 4. About 565 kcal and 32 g protein per serving.
Ingredients
For the dough
- 300 g flour
- 1 sachet (10 g) baking powder
- 1 teaspoon salt
- 1 teaspoon oil
- 170 ml warm water
- 1 tablespoon oil for greasing the work surface and pan
For the topping
- 100 g sweet ketchup
- 2 fresh basil leaves
- 1/4 teaspoon dried marjoram
- 1/4 teaspoon dried oregano
- 150 g ham
- 150 g button mushrooms
- 100 g canned sweet corn
- 100 g canned peas
- 1/2 red bell pepper
- 50 g black olives with pits
- 200 g grated mozzarella
- 2 tablespoons sweet ketchup
Preparation
1. Heat the oven to 200°C. 2. Mix the flour with the baking powder and salt. Add 1 teaspoon of oil and the warm water, then knead until you have a dough that doesn’t stick. Oil the work surface and the 34 cm pan, roll out the dough and place it in the pan. 3. Wash, dry and chop the basil leaves. Mix them with 100 g of ketchup, the marjoram and oregano. 4. Spread the ketchup mixture over the dough. Dice the ham and slice the mushrooms. Rinse the corn, peas and olives, then pat them dry; cut the pepper into thin strips and the olives into small pieces, removing the pits. Arrange the toppings on the dough, sprinkle with mozzarella and drizzle with 2 tablespoons of ketchup. 5. Bake the pizza for 20 minutes, until the crust is cooked through and the edges are browned.
Notes
The 34 cm pan makes for a thin crust; in a smaller pan it will be thicker and may need a few extra minutes. Small button mushrooms slice evenly, while I cut larger ones thinner. The corn and peas need to be well drained and dried after rinsing so they don’t release liquid onto the crust. If the grated mozzarella has whey in the package, drain it before sprinkling it on. I took the opportunity to try the pan I won in a competition and Adnia’s quick dough, if I remember her name correctly. I cut the pizza into narrow slices and serve it with green salad. Leftovers keep in a sealed container in the fridge for up to 3 days. The ham can be replaced with 150 g of cooked turkey breast, diced. The dough contains gluten, and the mozzarella contains dairy.
Frequently asked questions
Can I use fresh mozzarella instead of grated?
Yes. Use a 125 g ball, leave it to drain for 30 minutes and pat it dry before tearing it into pieces.
Can I use brown mushrooms too?
Yes, slice them about 3 mm thick; thicker slices may stay firmer after baking.
How do I prepare fresh peas?
Boil them for 4 minutes in boiling water, then drain them well before putting them on the crust.
