Crispy chicken and guacamole mille-feuille

Crispy chicken and guacamole mille-feuille has crisp filo layers, lightly spicy avocado and diced chicken with peppers. I bring it whole to the table and cut it there, while the layers are still crackling. Preparation: 30 minutes. Cooking: 16 minutes. Total time: 46 minutes. Serves: 4. About 620 kcal and 30 g protein per serving.
Ingredients
For the filo layers
- 36 filo circles
- 40 g clarified butter
- 10 g poppy seeds
For the guacamole
- 2 medium avocados
- 1 medium tomato (120 g)
- 1 small green onion (15 g)
- 1/2 garlic clove (2 g)
- 1/4 teaspoon fine salt
- 1/8 teaspoon ground pepper
- 1/4 teaspoon chopped chili pepper
For the filling
- 15 ml olive oil
- 1 medium onion (150 g)
- 1/2 red pepper (75 g)
- 1/2 yellow pepper (75 g)
- 1/2 green pepper (75 g)
- 400 g chicken breast
- 1/2 teaspoon fine salt
- 1/4 teaspoon ground pepper
Preparation
1. Preheat the oven to 180°C. Cut 36 circles from the filo sheets, brush them with clarified butter and sprinkle with poppy seeds. Bake for 3 minutes, until golden and crisp. 2. Peel and seed the tomato, then chop it finely. Put the avocado, tomato, finely chopped green onion, grated garlic, 1/4 teaspoon salt, 1/8 teaspoon pepper and chili pepper in a blender. Blend in a few pulses, for 2 minutes total. 3. Dice the onion and peppers, then cut the chicken breast into cubes about 1.5 cm across. Heat the oil in a nonstick pan and cook the onion and peppers for 5 minutes, until softened and lightly browned. Add the chicken, 1/2 teaspoon salt and 1/4 teaspoon pepper; cook for 8 minutes, stirring, until the meat is no longer pink inside. 4. For each serving, stack 3 filo circles, spread on a thin layer of guacamole and top with some of the chicken and pepper mixture. Add 3 more circles and repeat the filling layer. Finish with 3 filo circles and serve immediately.
Notes
For a seafood version, replace the chicken with 300 g shrimp and 100 g scallops, also cut into small cubes. Filo sheets contain gluten, and clarified butter is still a dairy product. The baked circles can be kept in a sealed container for a few days, but assemble the stacks just before serving. Choose avocados that yield slightly when pressed, without very soft or dark patches. If the tomato releases a lot of juice after you cut it, let it drain before adding it to the blender. Chicken cubes that are close in size cook at the same time. The filling is reminiscent of fajitas, except the chicken and peppers are diced and layered between the sheets. A wide nonstick pan lets the vegetables and meat sit in a single layer. I serve them with a simple green salad.
Frequently asked questions
Can I replace the chicken breast with boneless thighs?
Yes. Use 400 g as well, cut the meat into cubes about 1.5 cm across and cook for 10-12 minutes, until it is no longer pink inside.
What should I do if the avocado is too firm?
Leave it whole at room temperature for another 1-2 days, then check that it has softened slightly before blending.
How can I thicken the guacamole if it turns out too runny?
Put it in a fine-mesh sieve for 5 minutes, then use it to assemble the mille-feuille.
Can I sprinkle something other than poppy seeds on top?
Yes, you can use 10 g sesame seeds; they brown quickly, so keep an eye on the filo toward the end of baking.
