Preparing the meat: Start by washing the chicken well under cold running water. Choose a large pot to place the meat and add 2.5 liters of cold water. Put the pot on the stove and allow the meat to boil. When the water starts to boil, use a skimmer to remove the foam that forms on the surface. This step is essential for obtaining a clear and appetizing borscht. 2. Adding the vegetables: When the meat is almost cooked (about 30 minutes), add the whole onion, sliced carrots, diced celery, and bell pepper. These vegetables will provide a rich flavor to the borscht. Let everything simmer over medium heat for another 15 minutes. 3. Flavoring the borscht: Meanwhile, peel the potatoes and cut them into cubes, then add them to the pot. When the potatoes are nearly cooked (after 10-15 minutes), add the diced tomatoes and the sour borscht. The latter will bring a sour note and give personality to your borscht.
